Since yesterday was Meatless Monday (and in my efforts to eat cleaner, sometimes meat-free)... I wanted to find a recipe where I could use the Morningstar Veggie Crumbles I found at the grocery store.
Boom, tacos it is!
1 lb veggie crumbles, hamburger style
1 (1 1/4 ounce) package taco seasoning mix (I went for low-sodium)
1 cup water
1 large tomato, diced
1 large green pepper, diced
Shredded lettuce or spinach (I used spinach)
1 1/4 cups low-fat cheddar cheese, shredded
Salsa
Non-fat plain Chobani (in place of sour cream)
8 inch whole wheat tortillas (or hard-shell taco shells if you want some crunch)
Directions:
1. Warm veggie crumbles crumbles in sauté pan
2. Add water and taco seasoning to crumbles and bring to a boil.
3. Simmer and stir until desired consistency is reached.
4. Dice tomatoes, green peppers & prepare the rest of your toppings i.e. cheese, salsa, Chobani/fat-free sour cream
5. Spoon it up and ENJOY!!
